No Gluten, No Dairy, No Nuts, No Soy, No Wheat, No Eggs, No Casein
Our “flour mix” contains natural sorghum flour (a cereal grain and a powerhouse of nutrition), tapioca starch and natural potato starch. Organic palm fruit shortening (non-hydrogenated and no trans fats) is used in the Vanilla and Vanilla Chocolate Chip cupcakes, as well as in all of our frosting.
Celiac-Friendly, Vegan-Friendly
The only corn starch used is in the powdered sugar, which is used only for the white frosting (although this may change soon--and can be made by special request in the meantime.) Cupcakes also contain xantham gum, which is a derivative of a naturally-occurring bacterium found on corn, but does not contain corn.
0 Trans Fats, No Cholesterol
We do not use any ingredients that contain trans fats or cholesterol.
No Refined Sugars – All Organic Agave Nectar
(Except for the evaporated cane juice in the chocolate chips and the evaporated cane powdered sugar in the white frosting.) Agave nectar is made from the blue agave plant and has a lower Glycemic Index than refined sugars (about half the amount of sugar). Agave nectar contains inulin, which is considered a pre-biotic. Evaporated cane juice is a healthy alternative to refined sugar. While both sweeteners are made from sugar cane, evaporated cane juice does not undergo the same degree of processing that refined sugar does, retaining more of the nutrients.
No Preservatives
Chocolate Chips are Gluten, Soy, Nut, Casein and Dairy Free
We use the Enjoy Life brand chocolate chips. We use them in the Chocolate Chocolate Chip cupcake, Vanilla Chocolate Chip cupcake and sprinkle them on the chocolate frosted cupcakes.
Chocolate Cupcakes
Our chocolate cupcakes are made with organic sweet potatoes and extra virgin olive oil.
Vanilla Cupcakes
Our vanilla cupcakes are made with organic vanilla rice milk and organic pineapple juice.
